We are longtime diners at Cuvee and appreciate Chef Gilbert Henry’s attention to a truly delightful dining experience each time we visit. We have made the trip from Portland to Carlton every winter for many years for one dish: Crab Juniper. It is a seasonal menu item only during Dungeness crab season, usually off the menu around April 1. A blend of exotically seasoned basmati rice, delicate white fish, Dungeness crab, pears, and cream sauce. Up until recently, I had focused most of my time dining at restaurants in the Portland area, there are so many great places there, you could go out every night and never run out. Finally got to dine at Cuvee last night. The food was wonderful, service impeccable and atmosphere just right; charm without pretense. Highly recommend! As other reviewers have stated, the price-fixe menu superb value.

Absolutely superb! While in town to watch the eclipse we visited a few vineyards and wine tasting spots around Carlton. We asked for recommendations but found the suggestions bland. Then we saw Cuvee. Wow, what luck. I cannot say enough good things about the food, its preparation, the service and the atmosphere.
Clearly, Cuvee was totally booked for the evening with large groups. However, we were met at the door and graciously accommodated. Their fixed price meal offered options to meet many tastes.
