We are longtime diners at Cuvee and appreciate Chef Gilbert Henry’s attention to a truly delightful dining experience each time we visit. We have made the trip from Portland to Carlton every winter for many years for one dish: Crab Juniper. It is a seasonal menu item only during Dungeness crab season, usually off the menu around April 1. A blend of exotically seasoned basmati rice, delicate white fish, Dungeness crab, pears, and cream sauce. Other standard consistent menu dishes are equally as good, our friends like the Boeuf Bourguignon. The Prix Fixe menu is $35 for three courses, we feel it is a great value for the quality of food and very pleasant experience.
